Lean and incredibly flavourful but still tender, the baseball steak is an excellent option for the barbeque or the stovetop. It’s cut from the lean center of the top sirloin, with the same hearty flavour but no fat cap and light to no marbling. Why is it called a baseball steak? It’s small in diameter and cut thick - as the fibres tighten during cooking, this steak becomes rounded and ends up looking rather like a baseball.
